Ingredients

  • 12 oz Spaghetti (gluten-free if needed)
  • 2 tbsp Olive oil
  • 12 oz Vegan ground beef (plant-based meat alternative)
  • 1 Yellow onion, diced
  • 3 Garlic cloves, minced
  • 28 oz Crushed tomatoes
  • 2 tbsp Tomato paste
  • 1 tsp Dried basil
  • 1 tsp Dried oregano
  • 0.25 tsp Red pepper flakes (optional)
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Fresh parsley, chopped (optional)
  • 2 tbsp Nutritional yeast (optional, for serving)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the spaghetti according to package instructions until al dente. Drain and set aside, reserving 1 cup of pasta water.

Step 2

Heat the olive oil in a large skillet over medium heat. Add the diced onion and sauté for 3-5 minutes, or until softened.

Step 3

Stir in the minced garlic and cook for an additional 1 minute, until fragrant.

Step 4

Add the vegan ground beef to the skillet and cook for 5-7 minutes, breaking it apart with a wooden spoon, until browned. Reduce heat if necessary to prevent burning.

Step 5

Stir in the crushed tomatoes, tomato paste, dried basil, dried oregano, red pepper flakes (if using), salt, and black pepper. Mix well to combine.

Step 6

Simmer the sauce on low heat for 10 minutes, stirring occasionally. If the sauce becomes too thick, add a small amount of the reserved pasta water to reach your desired consistency.

Step 7

Taste and adjust seasonings if needed.

Step 8

Add the cooked spaghetti to the skillet and toss to coat in the sauce. Alternatively, serve the sauce over individual plates of spaghetti.

Step 9

Garnish with fresh parsley and sprinkle with nutritional yeast, if desired.

Step 10

Serve immediately and enjoy your delicious vegan spaghetti with ground beef!
