Ingredients

  • 12 oz Vegan spaghetti
  • 8 oz Vegan shrimp
  • 3 tbsp Olive oil
  • 4 Garlic cloves
  • 0.5 tsp Red pepper flakes
  • 2 tbsp Fresh parsley, chopped
  • 1 tbsp Lemon juice
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 2 tbsp Vegan Parmesan (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Add the vegan spaghetti and cook according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the spaghetti and set aside.

Step 2

While the spaghetti cooks, prepare the garlic shrimp. Heat 2 tablespoons of olive oil in a large skillet over medium heat.

Mince the garlic cloves and add them to the skillet, cooking for 1-2 minutes until fragrant but not browned.
