  • 250 grams Chickpea flour (Besan)
  • 50 grams All-purpose flour
  • 150 grams Vegan ghee or coconut oil
  • 300 grams Sugar
  • 150 ml Water
  • 1 teaspoon Cardamom powder
  • 50 grams Chopped pistachios and almonds
  • 1 teaspoon Lemon juice

Directions

Step 1

Start by dry-roasting the chickpea flour and all-purpose flour gently in a pan over low heat until they become fragrant and lightly golden. This should take around 10-12 minutes. Stir continuously to avoid burning. Once done, remove from heat and set aside.

Step 2

In a separate pan, melt the vegan ghee or coconut oil on low heat. Add the roasted flour mixture into this melted ghee and cook for another 5-7 minutes. Stir constantly to ensure the flour absorbs the fat evenly. Remove from heat and let it cool.

Step 3

In a heavy-bottomed saucepan, combine sugar and water. Stir continuously and bring it to a boil. Allow it to simmer until it reaches a 2-string consistency. This typically means the syrup, when pressed between two fingers, should form two strings.

Step 4

Add the lemon juice to the sugar syrup to prevent crystallization and stir in the cardamom powder.

Pour the hot sugar syrup gradually into the cooled flour mixture while continuously stirring the mixture.
