Ingredients

  • 500 grams Snake gourd
  • 2 tablespoons Coconut oil
  • 1 teaspoon Mustard seeds
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Urad dal
  • 1 teaspoon Chana dal
  • 2 Green chilies, slit
  • 10 leaves Curry leaves
  • 0.5 teaspoon Turmeric powder
  • 0 to taste Salt
  • 3 tablespoons Grated coconut
  • 1 tablespoon Lemon juice
  • 2 tablespoons Cilantro leaves, chopped

Directions

Step 1

Wash and peel the snake gourd. Cut it lengthwise, remove the seeds and slice it into thin half-moons.

Step 2

Heat coconut oil in a large pan over medium heat.

Step 3

Add mustard seeds and let them splutter. Then add cumin seeds, urad dal, and chana dal. Stir until they turn golden brown.

Step 4

Add slit green chilies and curry leaves. Sauté for a few seconds until the aroma is released.

Add the sliced snake gourd to the pan and stir well.

Step 6

Sprinkle turmeric powder and salt over the snake gourd. Mix thoroughly.

Cover the pan with a lid and let cook on low heat for about 10 minutes, stirring occasionally.
