  • 1 teaspoon Chili powder
  • 1 teaspoon Cumin
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Pepper
  • 4 Large flour tortillas
  • 1 medium Avocado, sliced
  • 1 cup Vegan cheese, shredded
  • 0.25 cup Cilantro, chopped
  • 1 medium Tomato, diced
  • 15 ounces Vegan enchilada sauce

Directions

Step 1

Heat olive oil in a large skillet over medium heat. Add chopped onion and cook until translucent, about 5 minutes.

Step 2

Add minced garlic, diced red bell pepper, and zucchini to the skillet. Sauté for another 5-7 minutes until the vegetables are softened.

Stir in black beans, cooked quinoa, chili powder, cumin, salt, and pepper. Cook for another 3-4 minutes to blend the flavors.
