Ingredients

  • 3 cups all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons instant yeast
  • 1 teaspoon baking powder
  • 1 cup warm water
  • 3 tablespoons vegetable oil
  • 1 can (20 oz) canned young green jackfruit
  • 1 cup mushrooms, finely chopped
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 3 tablespoons soy sauce
  • 2 tablespoons vegan hoisin sauce
  • 1 tablespoon brown sugar
  • 0.5 teaspoon ground black pepper
  • 1 tablespoon cornstarch
  • 2 tablespoons water

Directions

Step 1

In a large bowl, mix the flour, sugar, and instant yeast.

Step 2

Gradually add the warm water and 2 tablespoons of oil to the dry mixture. Stir until a dough forms.

Step 3

Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic.

Step 4

Place the dough in a lightly oiled bowl, cover with a damp cloth and let it rise in a warm place for 1 hour or until doubled in size.

Step 5

Meanwhile, drain and rinse the jackfruit. Shred or chop it into smaller pieces.

Step 6

Heat the remaining tablespoon of oil in a pan over medium heat. Sauté the onions until translucent, then add garlic and cook for another minute.

Step 7

Add the jackfruit and mushrooms to the pan. Stir in soy sauce, hoisin sauce, brown sugar, and black pepper. Cook for 5-7 minutes until heated through.

Step 8

Mix cornstarch with 2 tablespoons of water in a small bowl to create a slurry. Add the slurry to the filling mixture and cook for another 2 minutes until the sauce thickens. Remove from heat and let it cool.

Step 9

After the dough has risen, punch it down and divide it into 12 equal portions. Roll each portion into a ball, then flatten each into a round disc.

Step 10

Spoon about 1-2 tablespoons of the filling into the center of each disc. Gather the edges and twist to seal the bun.

Step 11

Place each bun on a square of parchment paper, keeping the twisted side up.

Step 12

Arrange the buns in a steamer, leaving space between each bun for expansion. Cover and steam over boiling water for about 15 minutes.

Step 13

Turn off the heat and let the buns rest in the steamer for another 5 minutes before serving.
