Ingredients

  • 2 cups Young green jackfruit (canned in water or brine)
  • 1 medium Red bell pepper, diced
  • 1 medium Cucumber, diced
  • 1 cup Cherry tomatoes, halved
  • 1 large Avocado, diced
  • 0.25 cup Red onion, finely chopped
  • 0.5 cup Cilantro, chopped
  • 1 large Lime, juiced
  • 2 tablespoons Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Ground cumin
  • 4 cups Mixed salad greens

Directions

Step 1

Drain and rinse the canned jackfruit. Pat it dry with a paper towel and use your hands or a fork to pull it apart into shreds resembling chicken.

Heat a non-stick skillet over medium heat and add 1 tablespoon of olive oil. Once hot, add the shredded jackfruit and cook for 10 minutes, stirring occasionally.
