Ingredients

  • 500 g Seitan
  • 50 ml Olive oil
  • 30 ml Soy sauce
  • 15 ml Maple syrup
  • 2 tsp Smoked paprika
  • 1 tsp Ground cumin
  • 1 tsp Ground coriander
  • 1 tsp Garlic powder
  • 0.5 tsp Ground black pepper
  • 1 large Red onion
  • 2 large Bell peppers (assorted colors)
  • 200 g Cherry tomatoes
  • 10 pieces Wooden skewers
  • 10 g Fresh cilantro
  • 1 medium Lemon

Directions

Step 1

Begin by soaking the wooden skewers in water for at least 30 minutes to prevent them from burning during grilling.

Step 2

In a bowl, mix olive oil, soy sauce, maple syrup, smoked paprika, cumin, coriander, garlic powder, and black pepper to create the marinade.

Step 3

Cut the seitan into thick cubes, approximately 1-inch each, and place them in a shallow dish. Pour the marinade over the seitan, ensuring each piece is well-coated. Marinate for at least 20 minutes, preferably longer for stronger flavor.

Step 4

While seitan is marinating, peel and cut the red onion into large chunks. Similarly, deseed and chop the bell peppers into pieces roughly the same size as the onion.

Step 5

Once marinated, thread the seitan, onion, bell peppers, and cherry tomatoes onto the soaked skewers in an alternating pattern.

Step 6

Preheat a grill or grill pan over medium-high heat. Arrange the skewers on the grill, cooking for about 7 minutes on each side or until the seitan develops a nice char and the vegetables are tender.

Step 7

Meanwhile, finely chop fresh cilantro and halve the lemon.

Step 8

Once done, remove the skewers from the grill and transfer to a serving platter. Garnish with chopped cilantro and a squeeze of fresh lemon juice before serving.

Step 9

Accompany with a fresh salad or vegan yogurt dip to enhance the experience.
