Ingredients

  • 2 tablespoons Oil
  • 1 teaspoon Cumin seeds
  • 1 large, finely chopped Onion
  • 4 minced Garlic cloves
  • 1 inch, grated Ginger
  • 2 finely chopped Green chili
  • 3 large, pureed Tomatoes
  • 0.5 teaspoon Turmeric powder
  • 1 teaspoon Red chili powder
  • 1 teaspoon Coriander powder
  • 1 teaspoon Garam masala
  • 1 teaspoon or to taste Salt
  • 2 cups Water
  • 150 grams Besan Sev
  • 2 tablespoons, chopped Fresh coriander leaves

Directions

Step 1

Heat the oil in a large pan over medium heat.

Step 2

Add the cumin seeds and allow them to crackle for a few seconds.

Step 3

Add the finely chopped onion and sauté until golden brown.

Step 4

Add the minced garlic, grated ginger, and chopped green chili, and sauté for a couple of minutes until the raw smell goes away.

Add the pureed tomatoes to the pan and cook for 5-7 minutes, stirring occasionally, until the oil begins to separate from the tomato mixture.

Stir in the turmeric powder, red chili powder, coriander powder, garam masala, and salt. Mix well and cook for 2 minutes.

Pour in the water and bring the mixture to a boil. Lower the heat and let it simmer for about 10 minutes to let the flavors meld.

Once the gravy has thickened slightly, add the besan sev and mix gently, ensuring the sev is coated in the gravy.
