Ingredients

  • 250 grams All-purpose flour
  • 120 grams Vegan butter, cold and diced
  • 60 milliliters Iced water
  • 60 grams Sesame seeds
  • 30 grams Sugar
  • 1 teaspoon Salt
  • 2 tablespoons Maple syrup
  • 2 tablespoons Vegan milk

Directions

Step 1

In a large bowl, mix the all-purpose flour and salt together.

Step 2

Add the cold vegan butter to the flour mixture. Using your fingers or a pastry cutter, work the butter into the flour until the mixture resembles coarse crumbs.

Step 3

Gradually add iced water, stirring gently, until the dough holds together but is not sticky. You may not need all of the water.

Step 4

Gather the dough into a ball and wrap it in plastic wrap. Refrigerate for at least 30 minutes.

Step 5

Preheat the oven to 180°C (350°F) and prepare a baking sheet lined with parchment paper.

Step 6

On a lightly floured surface, roll out the chilled dough into a rectangle about 3mm thick.

Brush the surface with maple syrup, then sprinkle evenly with half of the sesame seeds and half of the sugar.

Step 8

Fold the dough into thirds, like a business letter, and roll it out again to a thin rectangle.

Brush with more maple syrup, sprinkle with the remaining sesame seeds and sugar.

Cut the rolled dough into evenly sized rectangles or squares as desired.
