Ingredients

  • 2 tbsp Olive oil

  • 0.25 tsp Black pepper
  • 1 medium Onion, diced
  • 1 medium Red bell pepper, diced
  • 2 cups Spinach, chopped
  • 4 links Vegan sausage, sliced
  • 0.5 tsp Garlic powder
  • 1 tbsp Soy sauce
  • 2 stalks Green onions, sliced

Directions

Step 1

Drain the tofu and pat it dry with paper towels. Crumble the tofu with your hands or a fork into a bowl, aiming for a scrambled egg consistency.

Step 2

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and red bell pepper and sauté for 5-7 minutes or until softened.

Add the sliced vegan sausage to the skillet and cook for another 3-4 minutes, stirring occasionally, until the sausage is browned.
