Ingredients

  • 200 grams firm tofu
  • 2 tablespoons nutritional yeast
  • 0.5 teaspoons turmeric powder
  • 0.5 teaspoons black salt (Kala Namak)
  • 0.25 teaspoons ground black pepper
  • 0.5 teaspoons onion powder
  • 0.5 teaspoons garlic powder
  • 2 tablespoons unsweetened almond milk
  • 1 tablespoons olive oil
  • 4 slices whole grain bread
  • 1 tablespoons fresh chives
  • 1 sliced avocado (optional)

Directions

Step 1

Drain and press the firm tofu to remove excess moisture. This can be done by wrapping the tofu in a clean kitchen towel and placing a heavy object on top for about 10 minutes.

Step 2

In a small bowl, mix the nutritional yeast, turmeric powder, black salt, black pepper, onion powder, and garlic powder.

Step 3

Crumble the pressed tofu into small, bite-sized pieces using your hands or a fork.

Step 4

In a medium-sized bowl, combine the crumbled tofu with the spice mix. Add almond milk and mix thoroughly until the tofu is evenly coated.

Step 5

Heat olive oil in a non-stick skillet over medium heat.

Step 6

Add the tofu mixture to the skillet and cook for about 5-7 minutes, stirring occasionally, until heated through and slightly browned.

Step 7

While the scrambled tofu is cooking, toast the slices of whole grain bread to your desired level of crispiness.

Step 8

Once the bread is toasted, arrange it on serving plates.

Step 9

Divide the vegan scrambled eggs evenly over the toast slices.

Step 10

Garnish with freshly chopped chives and serve immediately.

Step 11

Optionally, add sliced avocado on top of the scrambled tofu for added creaminess.
