  • 2 cups Cooked brown rice
  • 1 can, drained and rinsed Canned black beans
  • 4 large Whole wheat tortillas
  • 1 large, sliced Avocado
  • 0.25 cup, chopped Fresh cilantro
  • 0.5 cup Salsa
  • 1 medium, cut into wedges Lime

Directions

Step 1

Heat olive oil in a large skillet over medium heat.

Step 2

Add the chopped onion and minced garlic. Sauté for about 3-4 minutes until the onion becomes translucent.

Add the bell pepper, cooking for another 3-4 minutes until the pepper starts to soften.
