Ingredients

  • 14 ounces extra-firm tofu
  • 0.5 cup walnuts
  • 0.5 cup rolled oats
  • 3 tablespoons nutritional yeast
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon sage
  • 0.5 teaspoon thyme
  • 2 tablespoons soy sauce
  • 1 tablespoon maple syrup
  • 1 tablespoon ground flaxseeds
  • 2.5 tablespoons water
  • 2 tablespoons olive oil

Directions

Step 1

Press the tofu to remove excess moisture. Wrap in a clean kitchen towel and place a heavy object on top for at least 15 minutes.

Step 2

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.

Step 3

In a small bowl, combine the ground flaxseeds and water to make a flax egg. Let it sit for 5 minutes until it thickens.

Step 4

Place the walnuts and oats in a food processor and pulse until a coarse meal forms.

Step 5

Crumble the pressed tofu into the food processor and add the nutritional yeast, onion powder, garlic powder, sage, thyme, soy sauce, and maple syrup.

Step 6

Add the prepared flax egg as a binder and pulse until the mixture holds together but is not completely smooth.

Form the mixture into 1-inch balls, about the size of a golf ball, and place them on the prepared baking sheet.

Brush or spray the balls lightly with olive oil.

Bake in the preheated oven for 25 minutes, flipping halfway through, until golden brown and slightly crispy on the outside.
