Ingredients

  • 500 g All-purpose flour
  • 10 g Instant yeast
  • 20 g Granulated sugar
  • 5 g Salt
  • 300 ml Warm water
  • 60 ml Olive oil
  • 300 g Plant-based sausage
  • 1 small Onion
  • 2 Garlic cloves
  • 15 ml Soy sauce
  • 2 g Black pepper
  • 15 g Nutritional yeast
  • 5 g Thyme
  • 30 g Vegan butter
  • 20 ml Non-dairy milk

Directions

Step 1

In a large mixing bowl, combine the all-purpose flour, instant yeast, granulated sugar, and salt.

Step 2

Make a well in the center and add warm water and olive oil. Mix to form a dough.

Step 3

Knead the dough on a floured surface for about 10 minutes until it is smooth and elastic.

Step 4

Return the dough to a clean bowl, cover with a damp cloth, and let it rise in a warm place for 1 hour, or until doubled in size.

Step 5

Meanwhile, finely chop the onion and garlic. In a pan, heat a small amount of olive oil over medium heat.

Step 6

Add the onion and garlic to the pan, sautéing until softened and fragrant, about 5 minutes.

Step 7

Add the plant-based sausage, soy sauce, black pepper, nutritional yeast, and thyme to the pan. Cook until the sausage is browned, about another 5 minutes.

Step 8

Preheat your oven to 180°C (356°F).

Punch down the risen dough and divide it into 12 equal pieces.

Roll each piece into a ball, flatten it, and place a tablespoon of the sausage mixture in the center.

Pinch the edges together to seal and place the buns seam-side down on a baking sheet lined with parchment paper.

Repeat with the remaining dough and filling.

Cover the buns loosely with a cloth and let them rise again for 15 minutes.

Step 14

Brush the tops of the buns with non-dairy milk.

Bake in the preheated oven for 20 minutes, or until golden brown.

Remove from the oven and brush the tops with melted vegan butter for an extra touch of flavor. Serve warm.
