Ingredients

  • 4 links vegan sausage
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 1 medium bell pepper, diced
  • 3 cloves garlic, minced
  • 1 medium carrot, diced
  • 1 medium zucchini, diced
  • 1 cup basmati rice
  • 2 cups vegetable broth
  • 2 tablespoons soy sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon black pepper
  • 1 teaspoon salt

Directions

Step 1

Slice the vegan sausage links into bite-sized pieces. Set aside.

Step 2

In a large skillet over medium heat, heat 1 tablespoon of olive oil. Add the sliced vegan sausage and cook until browned on all sides, about 5-7 minutes. Remove from skillet and set aside.

Step 3

In the same skillet, add the remaining tablespoon of olive oil. Add the chopped onion, diced bell pepper, and minced garlic. Sauté until the onions are translucent, about 5 minutes.

Add the diced carrot and zucchini to the skillet. Cook, stirring occasionally, until the vegetables have softened, approximately 5 more minutes.
