  • 2 cups Vegetable broth
  • 1 large Carrot, grated

  • 2 tablespoons Flaxseed meal
  • 6 tablespoons Water
  • 0.25 cup Nutritional yeast
  • 2 tablespoons Tamari or soy sauce
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Oregano, dried
  • 1 teaspoon Thyme, dried
  • 1 cup Breadcrumbs, gluten-free
  • 2 tablespoons Parsley, chopped

Directions

Step 1

Preheat the oven to 350°F (175°C) and lightly grease a standard loaf pan or multiple mini loaf pans with olive oil.

Cook the brown rice according to package instructions using vegetable broth instead of water for additional flavor. Once cooked, set aside to cool slightly.

While the rice cooks, prepare the flax egg by combining flaxseed meal and water in a small bowl. Stir well and let it sit for 5 minutes to thicken.
