  • 1 teaspoon ground cumin
  • 1 teaspoon dried thyme
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 cup low-sodium vegetable broth
  • 0.5 cup frozen peas
  • 2 tablespoons, chopped fresh parsley

Directions

Step 1

Heat the olive oil in a large skillet over medium heat.

Step 2

Add the diced onion and red bell pepper. Sauté for about 5 minutes until the onion is translucent and the peppers are soft.

Stir in the minced garlic and cook for another 1 minute until fragrant.
