Ingredients

  • 200 grams vegan chicken pieces

  • 1 bell pepper, diced
  • 1 medium carrot, sliced
  • 150 grams broccoli florets
  • 1 cup brown rice, rinsed
  • 2.5 cups vegetable broth
  • 2 tablespoons soy sauce
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

In a large skillet or saucepan, heat the olive oil over medium heat.

Step 2

Add the chopped onion and garlic, sautéing until the onion becomes translucent, about 3-4 minutes.

Add the bell pepper, carrot, and broccoli florets to the skillet. Cook for an additional 5 minutes, until the vegetables are slightly tender.
