Ingredients

  • 1 cup Textured vegetable protein (TVP)
  • 1 cup Vegetable broth
  • 2 tablespoons Soy sauce
  • 2 tablespoons Olive oil
  • 1 medium Onion, finely chopped
  • 3 cloves Garlic, minced
  • 1 cup Mushrooms, finely chopped
  • 2 tablespoons Tomato paste
  • 1 teaspoon Paprika
  • 0.5 teaspoon Smoked paprika
  • 1 teaspoon Cumin
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Salt
  • 2 tablespoons Nutritional yeast
  • 0.5 cup Ladyfingers, chopped (optional for added texture)

Directions

Step 1

In a medium-sized bowl, combine the textured vegetable protein (TVP) with the vegetable broth and soy sauce. Let it sit for about 10 minutes to rehydrate.

Step 2

In a large skillet, heat olive oil over medium heat. Add the chopped onion and cook until translucent, about 3-5 minutes.

Step 3

Add the minced garlic and chopped mushrooms to the skillet. Cook for another 5 minutes, stirring frequently, until the mushrooms are browned and have released their moisture.

Step 4

Stir in the tomato paste, paprika, smoked paprika, cumin, black pepper, and salt. Cook for 1-2 minutes until the spices are fragrant and the tomato paste is well-incorporated.

Step 5

Add the rehydrated TVP to the skillet, mixing thoroughly with the other ingredients. Cook for 3-4 minutes until the TVP is heated through.

Step 6

If using ladyfingers for texture, add them at this point and mix well.

Step 7

Stir in the nutritional yeast, ensuring it is evenly distributed throughout the mixture.

Step 8

Taste and adjust seasonings as needed, adding more salt or pepper if desired.

Step 9

Remove from heat and allow the filling to rest for a few minutes to let the flavors meld together.

Step 10

Use as a filling for tacos, enchiladas, pasta, or any other favorite dishes.
