Ingredients

  • 1 tablespoon olive oil
  • 4 links vegan sausages
  • 1 medium red bell pepper, diced

  • 2 cloves garlic, minced
  • 1 15-ounce can canned black beans, drained and rinsed
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 4 large tortillas
  • 1 medium avocado, sliced
  • 0.25 cup fresh cilantro, chopped
  • 0.5 cup salsa

Directions

Step 1

Heat the olive oil in a large skillet over medium heat.

Step 2

Add the vegan sausages to the skillet and cook them for about 5 minutes, turning occasionally until browned. Remove them from the skillet and slice into rounds. Set aside.

Step 3

In the same skillet, add the diced red bell pepper and chopped onion. Sauté for about 5 minutes or until the vegetables are tender.
