  • 2 tablespoons olive oil
  • 1 red bell pepper, diced
  • 1 cup spinach, chopped
  • 1 avocado, sliced
  • 4 large flour tortillas
  • 0.5 cup salsa

Directions

Step 1

Crumble the extra-firm tofu into a bowl to create a 'scrambled' texture.

Step 2

Add nutritional yeast, turmeric powder, garlic powder, salt, and black pepper to the crumbled tofu. Mix well to evenly coat the tofu. Set aside.

Step 3

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the diced red bell pepper and sauté until it begins to soften, about 3-4 minutes.
