Ingredients

  • 400 g vegan sausage
  • 1 cup brown rice
  • 2 cups vegetable broth
  • 1 medium, chopped onion
  • 1 medium, chopped red bell pepper
  • 1 medium, sliced zucchini
  • 3 cloves, minced garlic
  • 2 tablespoons olive oil
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons nutritional yeast
  • 2 tablespoons, chopped fresh parsley

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a large skillet, heat the olive oil over medium heat.

Step 3

Add the chopped onion and red bell pepper. Sauté for 5 minutes until the onion becomes translucent.

Step 4

Stir in the minced garlic and cook for an additional 1 minute.

Step 5

Slice or crumble the vegan sausage and add to the skillet. Cook for 5 minutes, stirring occasionally, until lightly browned.

Step 6

Add the zucchini slices, tomato paste, dried thyme, oregano, smoked paprika, salt, and black pepper to the skillet. Stir well to combine and cook for another 2 minutes.

Step 7

Rinse the brown rice under cold water, then add it to the skillet along with the vegetable broth. Stir everything together.

Step 8

Bring the mixture to a boil, then reduce the heat to low and cover the skillet. Simmer for 20 minutes, stirring occasionally, until the rice is tender and most of the liquid is absorbed.

Step 9

Remove the skillet from heat and stir in the nutritional yeast.

Step 10

Transfer the mixture into a greased casserole dish and cover with foil.

Step 11

Bake in your preheated oven for 15 minutes.

Step 12

Remove the foil and bake for an additional 5 minutes to lightly brown the top.

Step 13

Garnish with chopped fresh parsley before serving.

Step 14

Let the casserole rest for a few minutes before serving to allow flavors to meld.
