Ingredients

  • 4 pieces Vegan croissants
  • 4 pieces Vegan sausage patties
  • 400 grams Firm tofu
  • 2 tablespoons Nutritional yeast
  • 0.5 teaspoons Turmeric powder
  • 0.25 teaspoons Black salt (Kala Namak)
  • 4 slices Vegan cheese slices
  • 1 tablespoon Olive oil
  • 1 cup Spinach leaves
  • 0.25 teaspoons Salt
  • 0.25 teaspoons Black pepper

Directions

Step 1

Preheat the oven to 180°C (350°F).

Step 2

Slice the vegan croissants in half horizontally, but do not cut through completely. Arrange them on a baking tray lined with parchment paper.

Step 3

In a large frying pan, heat the olive oil over medium heat. Add the vegan sausage patties and cook for about 4 minutes on each side, until browned and heated through. Set aside on a plate.

Crumble the firm tofu into the same pan, breaking it into small pieces to resemble scrambled eggs.
