Ingredients

  • 300 grams pasta of your choice (e.g., spaghetti, penne, or fusilli)

  • 3 cloves garlic cloves, minced
  • 400 grams canned crushed tomatoes
  • 200 grams sauerkraut, drained and roughly chopped
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 2 tablespoons nutritional yeast
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Reserve 1/2 cup of the pasta water, then drain the pasta and set aside.

In a large skillet or pan, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until softened.
