  • 400 grams Baby potatoes
  • 200 grams Green beans
  • 1 cup Canned chickpeas (drained and rinsed)
  • 1 cup Cherry tomatoes
  • 1/3 cup Kalamata olives (pitted)
  • 4 cups Mixed greens
  • 1/4 cup Red onion (thinly sliced)
  • 1 tablespoon Capers
  • 3 tablespoons Extra virgin olive oil
  • 1 teaspoon Dijon mustard
  • 2 tablespoons Red wine vinegar
  • 1 tablespoon Lemon juice
  • 1 tablespoon Fresh parsley (chopped)
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper

Directions

Step 1

Place the baby potatoes in a medium saucepan and cover them with water. Bring to a boil and cook for 10-12 minutes, or until fork-tender. Drain and cool slightly, then cut them in halves or quarters, depending on size.
