  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Heat the olive oil in a large pot over medium heat. Add the chopped onion, and cook until it becomes translucent, about 5 minutes.

Step 2

Stir in the minced garlic and diced celery, cooking for an additional 2 minutes until fragrant.

Step 3

In a separate saucepan, bring the vegetable broth and water to a simmer.

Add the arborio rice to the pot with the onions and celery, stirring for 1-2 minutes until the rice is well-coated with oil and slightly toasted.

Ladle in 1 cup of the hot broth mixture to the rice and stir constantly until most of the liquid is absorbed.
