Ingredients

  • 250 grams Soy curls or seitan strips
  • 3 tablespoons Soy sauce
  • 2 tablespoons Olive oil
  • 3 pieces Garlic cloves
  • 1 piece Red bell pepper
  • 1 piece Green bell pepper
  • 1 piece Carrot
  • 150 grams Broccoli florets
  • 200 grams Mushrooms
  • 1 tablespoon Ginger root
  • 2 teaspoons Cornstarch
  • 100 milliliters Water
  • 0.5 teaspoon Black pepper
  • 2 pieces Spring onions
  • 1 tablespoon Sesame seeds

Directions

Step 1

Start by soaking the soy curls or seitan strips in soy sauce for about 10 minutes to let them absorb the flavors.

Step 2

Meanwhile, mince the garlic cloves and ginger, and then slice the bell peppers and carrot thinly. Cut the broccoli into small florets and slice the mushrooms.

Step 3

In a large skillet or wok, heat the olive oil over medium-high heat. Add the minced garlic and ginger and sauté for about 1 minute until fragrant.

Step 4

Add the marinated soy curls or seitan strips to the skillet. Cook them for 3-4 minutes until they begin to brown.

Step 5

Add the sliced mushrooms to the skillet and sauté for another 2 minutes to start releasing their juices.

Step 6

Next, add the sliced bell peppers, carrot, and broccoli to the skillet. Stir-fry the vegetables for about 5-6 minutes, maintaining some crunch and freshness in the veggies.

Step 7

In a small bowl, mix the cornstarch and water to create a slurry. Pour this into the skillet along with the remaining soy sauce to help thicken up the sauce.

Step 8

Season with black pepper according to your taste and continue cooking for an additional 2 minutes until the sauce has thickened and coats the strips and vegetables.

Step 9

Chop the spring onions and sprinkle them over the dish along with sesame seeds before serving.

Step 10

Serve hot over your choice of cooked rice or noodles for a complete meal.
