Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 medium cucumber
  • 1 cup cherry tomatoes
  • 1 medium red bell pepper
  • 0.5 medium red onion
  • 0.5 cup fresh parsley
  • 0.25 cup fresh mint leaves
  • 3 tablespoons lime juice
  • 2 tablespoons olive oil
  • 0.5 teaspoon ground cumin
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Rinse 1 cup of quinoa under cold water using a fine mesh strainer.

Step 2

In a medium saucepan, combine the rinsed quinoa and 2 cups of water. Bring to a boil over medium-high heat.

Once boiling, reduce the heat to low, cover, and let it simmer for about 15 minutes or until the quinoa has absorbed all the water.

Remove the saucepan from heat and let it sit, covered, for 5 minutes. Then fluff the quinoa with a fork and let it cool to room temperature.
