In a large bowl, mix together the flour, yeast, and sugar.
Warm the almond milk slightly to lukewarm and mix in the vanilla extract. Add this mixture to the flour mixture and stir until it forms a dough.
Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
Cover the dough and let it rise in a warm place for 1-2 hours or until doubled in size.
While the dough is rising, soak the raisins in warm water for about 10 minutes, then drain and set aside.
Once the dough has risen, roll it out into a rectangle about 0.5 cm thick.
Spread the softened vegan butter over the dough evenly.
Sprinkle the soaked raisins and ground cinnamon evenly over the dough.
Fold the dough into thirds, like a letter, and roll out again into a rectangle. Repeat the folding process two more times to develop layers.
Cover the dough and refrigerate it for 1 hour to firm up.
Preheat the oven to 180°C (350°F). Line a baking sheet with parchment paper.
Cut the dough into 8 equal rectangles and twist each into a swirl, pressing the ends together.
Place the danishes on the prepared baking sheet and cover them loosely with a towel. Allow them to rise for another 30 minutes.
Mix the cornstarch with water to create a cornstarch slurry.
Brush the top of each Danish with the cornstarch slurry, which will help give a glossy appearance.
Bake in the preheated oven for 18-20 minutes or until golden brown.
Remove from the oven and let cool slightly on a wire rack.
Mix the powdered sugar with a tablespoon of water to create icing and drizzle over the cooled danishes before serving.
