  • 1 tablespoon apple cider vinegar

  • 1 teaspoon baking powder

  • 1 ripe banana
  • 0.5 cup maple syrup
  • 0.25 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 0.75 cup raisins

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.

Step 2

In a small bowl, mix the almond milk and apple cider vinegar. Set aside to curdle and create a vegan 'buttermilk'.

Step 3

In a large mixing bowl, combine the whole wheat flour, bran cereal, baking soda, baking powder, ground cinnamon, and salt. Stir to combine.
