Ingredients

  • 1 9-inch Vegan pie crust
  • 2 large Leeks
  • 2 tablespoons Olive oil
  • 14 ounces Firm tofu
  • 2 tablespoons Nutritional yeast
  • 0.5 cup Unsweetened almond milk
  • 1 tablespoon Lemon juice
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.25 teaspoon Turmeric powder
  • 2 tablespoons Chickpea flour

Directions

Step 1

Preheat your oven to 375°F (190°C).

Carefully wash the leeks to remove any grit. Trim the roots and dark green parts, then slice the leeks into thin rounds.

In a large skillet, heat the olive oil over medium heat. Add the sliced leeks and cook, stirring occasionally, until they become soft and slightly golden, about 8-10 minutes. Set aside to cool slightly.
