  • 1 cup Vegan shredded cheese

  • 1 teaspoon Ground cumin
  • 1 teaspoon Smoked paprika
  • 2 tablespoons Fresh cilantro, chopped (optional)
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Heat 1 tablespoon of olive oil in a large skillet over medium heat.

Step 2

Add the diced red bell pepper, zucchini, and red onion to the skillet. Sauté for 5-7 minutes, until the vegetables are tender.

Step 3

Stir in the black beans, ground cumin, smoked paprika, salt, and black pepper. Cook for an additional 2 minutes, mixing well. Remove from heat.

Place a flour tortilla on a clean surface or cutting board. Sprinkle a thin, even layer of vegan shredded cheese over one half of the tortilla.
