Ingredients

  • 2 cups Masa harina
  • 1.5 cups Warm water
  • 1 teaspoon Salt
  • 1 cup Vegan refried beans
  • 1 cup Vegan mozzarella cheese
  • 0.5 cup Chopped onions
  • 0.5 cup Chopped red bell pepper
  • 2 tablespoons Vegetable oil

Directions

Step 1

In a large bowl, combine the masa harina and salt. Gradually add warm water, mixing with your hands until a soft dough forms. The dough should be pliable but not sticky. Cover the bowl with a damp cloth and let it rest for 10 minutes.

Step 2

Prepare the filling by mixing the vegan refried beans, vegan mozzarella cheese, chopped onions, and chopped red bell pepper in a separate bowl until well combined.

Step 3

Divide the masa dough into 6 equal portions, rolling each portion into a ball with your hands.

Step 4

Flatten a dough ball into a disk about 1/4-inch thick using your hands. Place about 2 tablespoons of the filling mixture in the center of the disk.

Step 5

Gently fold the edges of the dough over the filling to enclose it completely, then flatten it back into a disk shape, about 1/3-inch thick. Be careful not to expose the filling.

Step 6

Repeat the process for the remaining masa balls and filling.

Step 7

Heat the vegetable oil in a large non-stick skillet over medium heat.

Step 8

Cook the pupusas in batches for 4-5 minutes on each side until they are golden brown and crisp.

Step 9

Once cooked, transfer the pupusas to a plate lined with paper towels to absorb any excess oil.

Step 10

Serve the pupusas warm with your favorite vegan curtido or salsa for an authentic experience.
