Ingredients

  • 200 g black glutinous rice
  • 1500 ml water
  • 100 g palm sugar
  • 200 ml coconut milk
  • 0.5 tsp salt
  • 2 leaves pandan leaves

Directions

Step 1

Rinse the black glutinous rice under cold water until the water runs clear, then soak it in a bowl of water for at least 4 hours or overnight if possible.

Step 2

Drain the soaked rice and set it aside.

Step 3

In a large pot, bring 1500 ml of water to a boil. Add the drained black glutinous rice and pandan leaves to the pot.

Step 4

Reduce the heat to low and let it simmer, partially covered, for about 60-75 minutes, stirring occasionally to prevent the rice from sticking to the bottom.

Step 5

Once the rice is soft and the mixture has a porridge-like consistency, add in the palm sugar and stir until it is fully dissolved.

Step 6

In a separate small saucepan, gently heat the coconut milk with salt until warm. Do not let it boil.

Step 7

Remove the pandan leaves from the rice mixture. Taste and adjust sweetness if necessary by adding more palm sugar.

Step 8

Serve the warm Pulut Hitam in bowls with a generous drizzle of the warmed coconut milk on top.

Step 9

For an extra aroma, you can add a knot of pandan leaf to the coconut milk while warming and remove it before serving.
