Ingredients

  • 2 cups All-purpose flour
  • 1 tablespoon Baking powder
  • 0.5 teaspoon Baking soda
  • 0.25 teaspoon Salt
  • 0.5 teaspoon Ground nutmeg
  • 1 cup Unsweetened almond milk
  • 1 tablespoon Apple cider vinegar
  • 0.5 cup Granulated sugar
  • 2 teaspoons Vanilla extract
  • 0.25 cup Coconut oil, melted
  • 1 cup Powdered sugar

Directions

Step 1

Preheat oven to 350°F (175°C).

Step 2

Lightly grease a donut pan with coconut oil or use non-stick cooking spray.

Step 3

In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, and nutmeg. Set aside.

Step 4

In a separate bowl, combine almond milk and apple cider vinegar. Let the mixture sit for a few minutes to curdle slightly, creating a 'buttermilk'.

Step 5

Add the granulated sugar, vanilla extract, and melted coconut oil to the 'buttermilk'. Stir until well combined.

Step 6

Pour the wet mixture into the dry ingredients. Stir gently until just combined. Be careful not to over-mix.

Step 7

Transfer the batter into a piping bag or a large zip-top bag. Cut off the tip and pipe the batter into the prepared donut pan, filling each mold about 3/4 full.

Step 8

Bake in the preheated oven for 10-12 minutes, or until the donuts are golden and a toothpick inserted into a donut comes out clean.

Step 9

Remove the donuts from the oven and let them cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.

Step 10

Once cooled, dredge the donuts in powdered sugar, ensuring they are evenly coated.

Step 11

Serve immediately or store in an airtight container for up to two days. Enjoy your vegan powdered sugar donuts!
