Ingredients

  • 4 large russet potatoes
  • 1 medium red bell pepper
  • 1 medium green bell pepper
  • 1 medium yellow onion
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 2 tablespoons fresh parsley

Directions

Step 1

Peel the russet potatoes and dice them into 1/2-inch cubes.

Step 2

Place the cubed potatoes in a pot of cold salted water. Bring to a boil over high heat, then reduce to a simmer and cook for 5 minutes. Drain and set aside.

Step 3

Dice the red and green bell peppers as well as the onion into similar-sized pieces as the potatoes.

Step 4

In a large, non-stick skillet, heat the olive oil over medium heat.

Step 5

Add the diced onion to the skillet and sauté for 3 minutes until it begins to soften.

Step 6

Increase the heat to medium-high and add the bell peppers and drained potatoes to the skillet.

Step 7

Sprinkle the salt, black pepper, garlic powder, and smoked paprika over the potato mixture. Stir well to ensure everything is evenly coated in the spices.

Step 8

Cook the mixture for 15-20 minutes, stirring occasionally, allowing the potatoes to become golden brown and crispy. Avoid stirring too often to allow the potatoes to crisp up nicely.

Step 9

Check seasoning and adjust salt and pepper to taste.

Step 10

Once cooked, remove from heat and sprinkle freshly chopped parsley over the top before serving.

Step 11

Serve hot as part of a breakfast or brunch spread.
