  • 4 large Vegan tortillas
  • 0.5 cup Vegan sour cream
  • 2 tablespoons Sliced green onions

Directions

Step 1

Peel the russet potatoes and cut them into 1-inch cubes. Place the potatoes in a large pot, fill with water to cover, and bring to a boil over medium-high heat.

Once boiling, reduce the heat to medium, and cook the potatoes for 10-15 minutes, or until they are tender and easily pierced with a fork. Drain the water and return the potatoes to the pot.
