Ingredients

  • 2 cans (20 oz each) Canned young green jackfruit
  • 2 tablespoons Olive oil
  • 3 tablespoons Soy sauce
  • 2 tablespoons Red wine vinegar
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Dried oregano
  • 1 teaspoon Ground cumin
  • 0.5 teaspoon Black pepper
  • 4 pieces Vegan pita bread
  • 1 medium Cucumber
  • 1 cup Vegan yogurt
  • 1 tablespoon Lemon juice
  • 2 tablespoons Fresh dill
  • 1 tablespoon Fresh mint
  • 1 teaspoon Salt
  • 1 cup Romaine lettuce
  • 1 large Tomato
  • 0.5 medium Red onion

Directions

Step 1

Drain and rinse the canned jackfruit. Pat them dry with a paper towel and then use your fingers to shred them into strips.

Step 2

In a large bowl, whisk together olive oil, soy sauce, red wine vinegar, smoked paprika, garlic powder, onion powder, oregano, cumin, and black pepper.

Step 3

Add the shredded jackfruit to the marinade, tossing to coat. Let it marinate for at least 15 minutes for best flavor.

Step 4

While the jackfruit marinates, peel the cucumber and grate it using a box grater. Squeeze out the excess moisture using a clean kitchen towel.

Step 5

In a small bowl, mix the grated cucumber with vegan yogurt, lemon juice, dill, mint, and salt to make the vegan tzatziki sauce.

Step 6

Preheat a skillet over medium heat and add the marinated jackfruit with all the marinade. Cook for about 20 minutes, stirring occasionally, until the jackfruit is tender and slightly caramelized.

Step 7

Warm the vegan pita bread in a separate pan, oven, or microwave according to your preference.

Step 8

Prepare the toppings by chopping the romaine lettuce, dicing the tomato, and slicing the red onion thinly.

Step 9

To assemble the gyros, lay a warm pita on a plate and top with a scoop of the cooked jackfruit, a generous dollop of vegan tzatziki sauce, romaine lettuce, tomato, and sliced red onion.

Step 10

Wrap the pita around the fillings and serve immediately. Enjoy your delicious Vegan Pork Gyros!
