Ingredients

  • 2 tablespoons Olive oil
  • 1 large, chopped Onion
  • 4 minced Garlic cloves
  • 2 inches, sliced Ginger
  • 2 large, chopped Carrot
  • 2 chopped Celery stalks
  • 1 cup Dried shiitake mushrooms
  • 1 sheet Kombu (dried seaweed)
  • 2 tablespoons Soy sauce
  • 2 tablespoons Miso paste
  • 2 Bay leaves
  • 1 tablespoon Black peppercorns
  • 1 cup, broken into pieces Optional tofu skin (yuba)
  • 10 cups Water
  • 1 teaspoon, or to taste Salt

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the chopped onion, garlic, and ginger to the pot. Sauté for about 5 minutes until the onions are translucent.

Step 3

Add the chopped carrots and celery. Continue to sauté for another 5 minutes.

Step 4

Add the dried shiitake mushrooms, kombu sheet, soy sauce, miso paste, bay leaves, and black peppercorns to the pot. Stir well to combine the ingredients.

Step 5

Pour in the water and bring the mixture to a boil.

Step 6

Once boiling, reduce the heat to a low simmer. Cover the pot partially with a lid and let it simmer for about 1.5 to 2 hours, allowing the flavors to infuse.

After simmering, remove the kombu and bay leaves from the pot.

If using tofu skin, add it to the broth and simmer for an additional 10 minutes.

Strain the broth through a fine mesh sieve into another pot or bowl to remove the solids.
