Ingredients

  • 2 large English cucumbers
  • 1 cup Vegan sour cream
  • 2 tablespoons Fresh dill
  • 1 tablespoon White vinegar
  • 1 tablespoon Lemon juice
  • 1 teaspoon Sugar
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Fresh chives
  • 0.25 teaspoon Garlic powder

Directions

Step 1

Wash the cucumbers thoroughly and dry them with a paper towel.

Step 2

Thinly slice the cucumbers using a mandolin slicer or a sharp knife. Aim for slices that are about 1/8 inch thick.

Step 3

In a large mixing bowl, combine the sliced cucumbers with a pinch of salt. Toss gently to coat, and let them sit for about 10 minutes to draw out excess moisture.

Step 4

Meanwhile, in a separate bowl, combine the vegan sour cream, white vinegar, lemon juice, sugar, salt, black pepper, garlic powder, and fresh dill. Stir until the mixture is smooth and fully combined.

Step 5

After the cucumbers have sat, drain off any accumulated liquid in the bowl.

Step 6

Gently pat the cucumbers dry with additional paper towels to remove excess water.

Step 7

Pour the vegan sour cream mixture over the cucumbers and toss gently until all slices are well coated.

Step 8

Sprinkle the fresh chives over the salad and toss lightly again to distribute.

Step 9

Chill the salad in the refrigerator for at least 30 minutes before serving to let the flavors meld together.

Step 10

Serve cold as a side dish or a refreshing salad.
