Place the flattened rice in a large sieve and rinse under cold water until all the grains are evenly moist. Let it rest in the sieve to drain any excess water.
In a large pan, heat the coconut oil over medium heat. Once hot, add mustard seeds and let them splutter, then add cumin seeds and sauté for 30 seconds.
Add the green chili and curry leaves, sauté for another 30 seconds.
Add the chopped onion to the pan and sauté until it turns translucent.
Stir in the turmeric powder, followed by the drained flattened rice.
Add salt and sugar to the rice mixture, stirring gently to mix everything well. Cook for about 4-5 minutes until the flattened rice is heated through.
