Ingredients

  • 200 grams flattened rice (poha)
  • 2 tablespoons coconut oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1 small, chopped green chili
  • 8 leaves curry leaves
  • 0.5 teaspoon turmeric powder
  • 1 medium, finely chopped onion
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 medium, juiced lemon
  • 2 tablespoons, chopped fresh cilantro
  • 3 tablespoons, roasted peanuts

Directions

Step 1

Place the flattened rice in a large sieve and rinse under cold water until all the grains are evenly moist. Let it rest in the sieve to drain any excess water.

Step 2

In a large pan, heat the coconut oil over medium heat. Once hot, add mustard seeds and let them splutter, then add cumin seeds and sauté for 30 seconds.

Step 3

Add the green chili and curry leaves, sauté for another 30 seconds.

Step 4

Add the chopped onion to the pan and sauté until it turns translucent.

Step 5

Stir in the turmeric powder, followed by the drained flattened rice.

Step 6

Add salt and sugar to the rice mixture, stirring gently to mix everything well. Cook for about 4-5 minutes until the flattened rice is heated through.

Step 7

Turn off the heat and drizzle the lemon juice over the pohe. Add chopped cilantro and roasted peanuts, stirring gently to combine.

Step 8

Serve warm, garnished with extra cilantro if desired.
