  • 1 medium, finely chopped Yellow onion
  • 3 minced Garlic cloves
  • 1 large, thinly sliced Red bell pepper
  • 1 large, thinly sliced Green bell pepper
  • 4 large, peeled and chopped Tomatoes
  • 1 teaspoon Paprika
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 teaspoon, chopped Fresh thyme
  • 1 Bay leaf
  • 2 tablespoons, chopped Fresh parsley

Directions

Step 1

Heat the olive oil in a large skillet over medium heat.

Add the chopped onion and sauté for 5 minutes, until translucent.

Step 3

Stir in the minced garlic and cook for another minute until fragrant.

Step 4

Add the sliced red and green bell peppers to the skillet and cook for about 10 minutes, stirring occasionally, until the peppers are softened.

Add the chopped tomatoes, paprika, salt, black pepper, fresh thyme, and the bay leaf.
