Ingredients

  • 200 g All-purpose flour
  • 40 g Sugar
  • 7 g Instant dry yeast
  • 1 tsp Salt
  • 180 ml Warm plant-based milk
  • 40 g Vegan butter, softened
  • 100 g Canned pineapple, finely chopped
  • 1 tsp Baking powder
  • 2 tbsp Raw sugar (for topping)
  • 1 tsp Vanilla extract
  • 1 tbsp Cornstarch
  • 2 tbsp Water

Directions

Step 1

In a large bowl, combine 200g flour, 40g sugar, 7g instant dry yeast, and 1 tsp salt.

Step 2

Mix in 180ml of warm plant-based milk to form a dough.

Step 3

Add 40g of softened vegan butter to the dough and knead for about 10 minutes until the dough is smooth and elastic.

Step 4

Cover the dough with a damp cloth and let it rise in a warm place for about 1 hour or until it doubles in size.

Step 5

After the dough has risen, punch it down and divide it into 8 equal pieces. Shape each piece into a ball and place on a lined baking sheet.

Step 6

For the topping, in a separate bowl, mix together 100g finely chopped canned pineapple, 100g flour, 50g sugar, 1 tsp baking powder, 1 tbsp cornstarch, 40g softened vegan butter, and 1 tsp vanilla extract until you get a crumbly texture.

Step 7

Preheat the oven to 180°C (350°F).

Flatten the topping mixture into 8 small discs and place each disc on top of the dough balls.

Sprinkle 2 tbsp of raw sugar evenly over the tops of the buns.

Let the buns rest for another 20 minutes to allow them to rise a little more.

Bake in the preheated oven for 15-20 minutes or until the tops are golden and crisp.
