Ingredients

  • 8 ounces rice noodles
  • 1 large, halved onion
  • 3 inches, sliced ginger
  • 2 medium, peeled and cut into chunks carrots
  • 2 anise stars
  • 1 cinnamon stick
  • 4 cloves
  • 1 tablespoon coriander seeds
  • 3 tablespoons soy sauce
  • 1 tablespoon maple syrup
  • 8 cups vegetable broth
  • 4 ounces, sliced shiitake mushrooms
  • 8 ounces, cubed firm tofu
  • 2 small heads, halved bok choy
  • 1 cup bean sprouts
  • 1 cut into wedges lime
  • 1 cup Thai basil
  • 1 cup cilantro
  • 1 sliced jalapeño pepper

Directions

Step 1

Char the onion and ginger by placing them under the oven broiler for about 5 minutes, turning halfway through, until they develop a charred exterior. This enhances flavor.

Step 2

In a large pot, add the charred onion and ginger, carrots, star anise, cinnamon stick, cloves, and coriander seeds. Pour in the vegetable broth and bring to a boil.

Step 3

Reduce the heat to a simmer and add soy sauce and maple syrup. Simmer uncovered for 60 minutes to allow the flavors to meld.

Step 4

While the broth is simmering, cook the rice noodles according to the package instructions. Drain and set aside.

Step 5

In a skillet, cook the sliced shiitake mushrooms in a bit of oil over medium-high heat until golden brown. Season with a pinch of salt and remove from heat.

Step 6

Once the broth has simmered for an hour, strain out the solids, keeping the broth clear.

Step 7

Add the cubed tofu and bok choy to the hot broth. Let them cook for about 5 minutes until the bok choy is wilted and the tofu is warmed through.

Step 8

Divide the cooked noodles among four bowls. Ladle the hot broth over the noodles, ensuring each serving has tofu, bok choy, and a selection of the broth's ingredients.

Step 9

Top each bowl with sliced mushrooms, bean sprouts, fresh herbs, jalapeño slices, and a wedge of lime.

Step 10

Serve hot, allowing guests to garnish as desired.
