  • 1 teaspoon Salt
  • 2 tablespoons Fresh parsley

Directions

Step 1

Peel the russet potatoes and cut them into 1/2-inch cubes. Rinse the cubed potatoes under cold water to remove excess starch. Drain and pat dry with a clean kitchen towel.

Step 2

Peel and finely dice the red onion. Mince the garlic cloves. Remove the seeds and stem from the red bell pepper, then chop it into small pieces.

Step 3

Heat 2 tablespoons of olive oil in a large non-stick skillet over medium heat. Add the potatoes, spreading them into a single layer. Cook for 10-15 minutes, stirring occasionally, until the potatoes start to turn golden brown.
