Ingredients

  • 200 grams Vegan dark chocolate
  • 2 tablespoons Coconut oil
  • 3 tablespoons Maple syrup
  • 1 teaspoon Peppermint extract
  • 1 cup Crushed cornflakes
  • 1 cup Raw almonds, chopped
  • 2 tablespoons Cocoa nibs
  • 0.5 teaspoon Sea salt

Directions

Step 1

Line an 8x8 inch baking pan with parchment paper and set aside.

Step 2

In a heatproof bowl, combine the vegan dark chocolate and coconut oil. Melt using a double boiler method or microwave in 30-second intervals, stirring in between until smooth.

Step 3

Once melted, stir in the maple syrup and peppermint extract until fully incorporated.

Step 4

Add the crushed cornflakes, chopped almonds, cocoa nibs, and sea salt to the chocolate mixture. Stir until all the dry ingredients are evenly coated.

Step 5

Pour the chocolate mixture into the prepared baking pan, spreading it evenly with a spatula.

Refrigerate the mixture for at least 2 hours or until fully set.
