Ingredients

  • 12 ounces Vegan penne pasta
  • 2 tablespoons Olive oil
  • 3 Garlic cloves, minced
  • 1 medium Onion, chopped
  • 28 ounces Crushed tomatoes
  • 2 tablespoons Tomato paste
  • 1 teaspoon Dried basil
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Red pepper flakes
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 cup Vegan cheese shreds
  • 0 optional Fresh basil leaves, for garnish

Directions

Step 1

Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

Step 2

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped onion, and sauté until the onion is translucent, about 5 minutes.

Stir in the crushed tomatoes, tomato paste, dried basil, dried oregano, red pepper flakes, salt, and black pepper. Bring the mixture to a simmer.
