Ingredients

  • 400 g firm tofu
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 2 tablespoons cornstarch
  • 2 tablespoons vegetable oil
  • 1 cup peanut butter
  • 1 cup coconut milk
  • 2 tablespoons maple syrup
  • 1 teaspoon sriracha sauce
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 2 tablespoons green onions, chopped
  • 2 tablespoons fresh cilantro, chopped
  • 2 tablespoons roasted peanuts, chopped
  • 4 cups rice, cooked

Directions

Step 1

Press the tofu to remove excess moisture. Cut the tofu into bite-sized cubes.

Step 2

In a shallow dish, combine soy sauce and lime juice. Add tofu cubes, toss to combine, and let marinate for 10 minutes.

Remove tofu from marinade, shaking off excess liquid. Toss tofu cubes in cornstarch to coat evenly.
