Ingredients

  • 1.5 cups Rolled oats
  • 0.75 cups Oat flour (or blend rolled oats into flour)
  • 1 teaspoon Baking powder
  • 0.5 teaspoons Ground cinnamon
  • 0.25 teaspoons Salt
  • 0.5 cups Natural creamy peanut butter
  • 0.5 cups Maple syrup
  • 2 tablespoons Coconut oil (melted)
  • 1 teaspoon Vanilla extract
  • 0.25 cups Mini dark chocolate chips (vegan)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the rolled oats, oat flour, baking powder, ground cinnamon, and salt. Stir until evenly mixed.

Step 3

In a separate bowl, whisk together the peanut butter, maple syrup, melted coconut oil, and vanilla extract until smooth and well-combined.

Step 4

Pour the wet ingredients into the bowl of dry ingredients and mix until a sticky dough forms. Add the mini dark chocolate chips and gently fold them in.

Step 5

Scoop about 1.5 tablespoons of the dough and roll it into a ball. Place the dough balls on the prepared baking sheet, spacing them about 2 inches apart. Flatten each ball slightly using your fingers or the back of a fork.

Step 6

Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The cookies may seem soft but will firm up as they cool.

Step 7

Remove the baking sheet from the oven and let the cookies cool on the tray for 5 minutes before transferring them to a wire rack to cool completely.

Step 8

Serve and enjoy your healthier vegan peanut butter oatmeal cookies!
